A Blogger A Day: Simply…Gluten Free
Why we’re fans: I know it rains in Florida, but Carol’s blog would never let you know it. Her food photos so colorful and bright, you can only imagine the sunshine streaming through her windows. The recipes themselves will put some life back into your dinners, too. But don’t worry – they’re completely manageable for any cook. In fact, Carol’s recipes are so refreshing yet user-friendly that QVC showcased her cookbook during a dedicated gluten-free broadcast in March.
Carol’s Story: I was diagnosed with gluten intolerance over 18 years ago. At the time, there was not much available in the way of information, and much fewer gluten-free products. Being a wife and mother with a family to feed, I had to figure out how to create dishes that would not only keep me healthy, but would also be pleasing to the family members who were not gluten intolerant. While at first I was not pleased with the diagnosis, and was daunted by having to give up many of my standard recipes, I came to realize that by making a few simple changes in my diet I could take control of and responsibility for my own health and physical well being. I have since learned to celebrate the abundance of gluten-free living.
According to Carol: The most unexpected part of going gluten-free was that seemingly unrelated health issues cleared up as a result of the gluten-free diet – such as migraine headaches and adrenal exhaustion.
